Yeast
Yeast is a living thing, a single cell organism; inhabitant aloft, wild in Air, Water & Earth. Through the centuries man has isolated and cultivated various strains of yeast. Among the many uses, yeast plays a key role in the making of beer, wine, cheese and bread. Yeasts are classified in the animal/plant/mineral kingdom; Fungi.
People have used yeast for fermentation and baking exclusively throughout history. Archaeologists found Egyptian ruins riddled with early grinding stones and baking chambers for yeasted bread, as well as drawings of 4,000-year-old bakeries and breweries alike.

Types of Mead
Last week one of my visitors to the tasting room asked me about the Ethiopian drink called ‘Tej’. So it seems that is a great place to start my blog for the day.
According to the Yogi Mantra – Tej: tejas ambrosia is the eternal elixir which can make a Human Being a king up from the status of a laborer. Riding on the waves of the mental upliftment provided by this cosmic nectar (Tej) can one see God one day.

Welcome to the Adytum Cellars “blogspot” In-the-Cellar. I get asked a lot of the same questions via e-mail and in the tasting room. I figured that I should start posting the answers as a reference for others as well as myself. I’m new to the concept of blogs so bear with me as I get aquanted and learn the ropes.
